Zucchini Bread

Ingredients

  • 1 & 3/4 cups Zucchini (grate and drain)
  • 2 eggs
  • 1/3 cup coconut oil
  • 1/2 cup milk or water (I used almond milk)
  • 1 & 2/3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup honey
  • 1 Tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • OPTIONAL 3/4 cup chopped walnuts

Step by Step Instructions

STEP 1
Whisk oil and honey together, add eggs and beat well.

STEP 2
Add milk, baking soda, cinnamon, vanilla, salt and nutmeg. Stir in zucchini and flour until just combined. Add nuts.

STEP 3
Pour into a loaf pan lined with baking paper. 
STEP 4
Bake for an hour, until a toothpick comes out clean. Let the bread cool before lifting out.
NOTE
This bread is moist, so it will keep just 2-3 days at room temp. Longer in frig. Freezes well in slices.
