White Bean Chicken Chili


Yes, he made this and it’s good! 


    • 1 tablespoon olive oil
    • 1 medium onion, diced
    • 1/2 jalapeno, minced OR 4 oz can chopped green chiles
    • 1 lb boneless, skinless chicken breasts, cut into 1″ pieces
    • 1 garlic clove, minced
    • 1 teaspoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon cayenne pepper
    • 1/2 cup frozen corn kernels
    • 2 (15 oz) cans white beans (Great Northern), drained 
    • 1 & 3/4 cups chicken broth
    • 1/4 cup heavy cream

    Step by Step Instructions

    STEP 1
    Heat olive oil in large pot over medium heat. Add onions and jalapeno, cook and stir 2-3 minutes.

    STEP 2
    Add chicken and cook until lightly browned on the outside and no longer pink on the inside (add more olive oil if needed) 4-5 minutes.
    STEP 3
    Stir in garlic and spices to coat chicken. Add corn, beans and chicken broth and bring to a boil. Reduce heat to low and simmer 30 minutes.
    Top with grated Monterey Jack Cheese, diced avocado.
