Waikiki Meatballs

A family favorite throughout the years. Serve over white rice.

Ingredients

MEATBALLS

  • 1.5 lbs ground chuck
  • 2/3 cup cracker crumbs
  • 1/3 cup minced onion
  • 1 egg
  • 1.5 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/4 cup milk

SAUCE

  • 2 tablespoons cornstarch
  • 1/2 cup brown sugar
  • 13.5 oz can or 1 cup fresh pineapple
  • 1/3 cup apple cidar vinegar
  • 1 tablespoon soy sauce
  • 1 green pepper, diced

Step by Step Instructions

STEP 1
Mix and shape meatballs. Refrigerate.
Mix sauce ingredients.

STEP 2
Brown meatballs in 1 tablespoon oil. Remove cooked meatballs from pan.
STEP 3
Add sauce ingredients to hot pan. Cook 1 minute until sauce thickens, then add meatballs to coat.
STEP 4
Add chopped bell pepper and pineapple. Cover and turn to low, stirring frequently until bell pepper is tender.
