Vegetable Chowder

Ingredients

  • 1 sweet onion, chopped
  • 5 ribs celery, sliced
  • 3 carrots, peel and slice
  • 2 large pototoes, peel and cube
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 1 cup corn, frozen or can (drain)
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 16 oz. Velvetta cheese, cubed
  • 2-4 oz. pimiento
  • 1 Tablespoon prepared mustard
  • 1/4 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1/2 teaspoon salt

Step by Step Instructions

STEP 1
Combine first 6 ingredients, bring to a boil, then reduce to low and simmer 20 minutes.

STEP 2
Stir in corn and remove from heat.
STEP 3
In separate saucepot, melt butter and stir in flour. Add milk and cheese, stir until cheese melts. Stir in pimiento, mustard and seasonings. 
STEP 4
Add cheese mixture to vegetable pot and simmer on low 10 minutes. Stir.
