Instant Pot Vegan Cauliflower Soup

Ingredients

  • 4 cups vegetable stock
  • 1 head cauliflower, roughly chopped
  • 2 potatoes, peeled & chopped
  • 2 carrots, peeled & chopped
  • 1 onion, roughly chopped
  • salt & pepper to taste
  • 1/4 cup olive oil
STEP 1
Combine all except oil in Instant Pot. Lock & set timer for 10 minutes.

 STEP 2
Let to sit 5 minutes after timer, then quick-release & unlock.
STEP 3
Use an immersion blender to carefully puree soup until smooth, adding olive oil as you blend.
