Collard Green Soup
Ingredients
- 1 T. olive oil
- 1 medium onion
- 2 carrots
- 2 stalks celery
- 3 cloves garlic
- 2 links Bradley’s sausage, skins removed
- 6 cups vegetable broth
- 1 small bunch collard greens, stems removed
- 2 small pototoes
- 1/2 cup cooked white beans
- 1 t. cumin
- 1/2 t. smoked paprika
Instructions
STEP 1
Heat olive oil in a large pot, then add diced onion, carrots, and celery and sauté until softened. Stir in garlic, cumin, paprika and remove from heat.
STEP 2
Separately, cook sliced sausage until no longer pink.
STEP 3
Combine all with broth and bring to a boil, add potatoes and reduce heat, simmer 10 minutes.
STEP 4
Stir in collard greens and beans, simmer another 15 minutes or until tender.< strong>
STEP 5
Add salt and pepper to taste.
