Cabbage Soup
Ingredients
- 2 T. olive oil
- 4 carrots, diced
- 1 onion, diced
- 1 t. salt
- 1/2 t. black pepper
- 1 t. smoked paprika
- 1/2 t. cumin
- 1/2 t. oregano
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 – 15 oz can fire roasted diced tomatoes in their juice
- 1 – 15 oz can white beans
- 1/2 green cabbage, chopped
- 1 bay leaf
- 1/2 t. dried rosemary
- 1 T. lemon juice
Instructions
Heat oil in large pot, add carrots, onion, salt and pepper. Saute 7 minutes or so.
Add paprika, cumin, nutmeg and garlic, stirring constantly, about 30 seconds.
Add enough broth to cover bottom of pot, scraping bits and then add remaining broth and remaining ingredients, bring to a boil.
Reduce heat, cover pot and simmer until cabbage is tender, about half an hour.
