Ally’s Favorite Tortilla Soup

Ingredients

  • 2 skinless, boneless chicken breast, cut into cubes
  • 1 tablespoon olive oil
  • 3 cloves minced garlic
  • 1 large chopped onion
  • 1 large chopped poblano chile pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cilantro or 2 T. fresh
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 1 small can tomato sauce
  • 1 can black beans, drained & rinsed
  • 1 can Rotel
  • 1 tablespoon lime juice

SERVE WITH

  • Corn Tortilla Chips
  • Avocado slices
  • Monterey Jack Cheese or sour cream

Step by Step Instructions

STEP 1
In large pot, over medium heat, cook and stir chicken in the oil for 5 minutes.

STEP 2
Add garlic and cumin to chicken and mix well.
STEP 3
Add broth, corn, onion, chili powder, lemon juice and salsa.
STEP 4
Reduce heat to low and cook 30 minutes.
SERVE WITH
Chips, cheese, sour cream
