Salmon Croquettes

Minnie made these, it’s the only thing I will fry in hot oil.

Ingredients

  • 1 large can pink salmon
  • 1 egg
  • 1/3 cup minced onion
  • 1 teaspoon fresh dill, minced
  • 1/2 cup flour
  • 1 & 1/2 teaspoons baking powder

Step by Step Instructions

STEP 1
Drain salmon, reserve 2 Tablespoons juice.

STEP 2
Combine all ingredients and drop by spoonfuls into hot oil. Drain on paper towels.
STEP 3
Serve with Dijon Mustard/Mayo sauce (50/50 combo)
