Lemon Meringue Pie
INGREDIENTS
- Baked Pie Shell
- 1 cup lemon juice (5 large lemons)
- 3 eggs
- 1 cup water
- 1/4 cup butter
- 3/4 cup sugar
- 1/4 cup cornstarch
- dash salt
- 1/2 teaspoon cream of tartar
INSTRUCTIONS
1 – Whisk lemon juice and water together. Add sugar, cornstarch and salt. Cook in top of double boiler until smooth and thickened.
2 – Whisk in egg yokes and butter.
3 – Pour filling into baked crust.
4 – Beat egg whites with cream of tartar and 1/4 cup sugar.
5 – Bake at 325 for 15 minutes.
