Baked Gnocchi

Our neighborhood friend from Ekana Green in Oviedo shared this recipe, thanks Marie!

Ingredients

  • 2 17-ounce pkgs potato gnocchi (DeCecco)
  • 3 cups heavy cream
  • 1 cup chicken broth
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 12 ounces baby spinach leaves
  • 3 ounces goat cheese (1/3 cup)
  • 1/2 cup grated parmesan

Step by Step Instructions

STEP 1
Preheat oven to 400 degrees.

STEP 2
Place gnocchi in lightly greased 9×13 baking dish.
STEP 3
In medium saucepan whisk together cream, broth and flour over medium heat until thickened – about 5 minutes. Add salt, pepper and nutmeg, then add spinach.
STEP 4
Pour combined mixture over evenly over gnocchi and spread out to cover. Crumble goat cheese over top and sprinkle with parmesan.
STEP 5
Bake about 30 minutes.
