Feta w/Lemon & Pasta

INGREDIENTS

  • 2 cups cherry tomatoes, halved
  • 2 cups zucchini, sliced
  • 1 small onion, sliced into thin rounds
  • 1 lemon, sliced
  • 8 oz feta cheese block, cut into 1″ slices
  • 3 T. olive oil
  • 1 T. cumin
  • 1/4 teaspoon salt
  • grinds of pepper
  • 1.2 t. red pepper flakes
  • OPTIONAL – mushrooms, sliced

MIX ingredients above and bake on sheet pan at 400 with rack set on lower third for 20 minutes,
then ADD:

  • 3 cups of pasta or rigatoni
  • fresh basil, chopped

     

    INSTRUCTIONS

    Preheat oven to 400, place first 8 items in a baking dish and cook 30 minutes.

    Top with fresh basil and serve over pasta.
