Feta w/Lemon & Pasta
INGREDIENTS
- 2 cups cherry tomatoes, halved
- 2 cups zucchini, sliced
- 1 small onion, sliced into thin rounds
- 1 lemon, sliced
- 8 oz feta cheese block, cut into 1″ slices
- 3 T. olive oil
- 1 T. cumin
- 1/4 teaspoon salt
- grinds of pepper
- 1.2 t. red pepper flakes
- OPTIONAL – mushrooms, sliced
MIX ingredients above and bake on sheet pan at 400 with rack set on lower third for 20 minutes,
then ADD:
- 3 cups of pasta or rigatoni
- fresh basil, chopped
INSTRUCTIONS
Preheat oven to 400, place first 8 items in a baking dish and cook 30 minutes.
Top with fresh basil and serve over pasta.
