Instant Pot Red Curry Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion
  • 8-10 cloves garlic
  • 1 teaspoon salt
  • 2 Tablespoons fresh grated ginger

OPTIONAL TO ADD:

  • 1 red or green pepper
  • 1-2 carrots
  • 2-3 pototoes
  • 4 Tablespoons butter
  • 1 Tablespoon curry powder
  • 2 teaspoons Garam Masala
  • 1 teaspoon salt
  • 3/4 teaspoon smoked paprika
  • dash cayanne pepper
  • 15 oz. tomato sauce
  • 1 cup heavy cream

Step by Step Instructions

STEP 1
Place butter, chopped onions, garlic, ginger and all spices in the Instant Pot. Saute for 5 minutes till onions are soft, stirring so ingredients don’t burn.

STEP 2
Add 1 cup water into pot. Use a wooden spoon to scrape bottom of pot, add tomato sauce and chopped chicken.

STEP 3
Lock lid and set to high pressure for 7 minutes. Quick release, then stir in heavy cream.

STEP 4
Serve over rice. 

NOTE:
Frozen chicken cooks perfectly tender in the instant pot.
