Instant Pot Potato Corn Chowder

Ingredients

  • 6-8 medium potatoes
  • 2 cups frozen white corn
  • 1 medium onion
  • 1 stalk celery
  • 1 red bell pepper
  • 2 teaspoons seasoned salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 5 cups chicken broth
  • 1 Tablespoons butter or olive oil
  • Stir in after cooking – 3-4 tablespoons sour cream

Step by Step Instructions

STEP 1
Peel and cube potatoes. Chop vegetables.

STEP 2
Add all to instant pot.
STEP 3
Lock lid and set to high pressure for 3 minutes. Allow to naturally release pressure (let sit for 5 minutes).

STEP 4
Stir in sour cream. Adjust salt to taste.
