Huevos Rotos

Our favorite tapas in Spain included Patatas Bravas. This broken egg dish also can be found throughout Spain. A one-pan meal good with either coffee or beer!

Ingredients
- ⅓ cup extra-virgin olive oil, plus more as needed
- 2 teaspoons smoked paprika
- ½ teaspoon red-pepper flakes or 1/4 teaspoon ground cayenne
- Salt and black pepper
- 2 pounds new potatoes, cut into halves or quarters if large
- 1 medium sweet onion, finely chopped
- 4 garlic cloves, finely chopped
- 4 eggs
- Lemon wedges, for serving
