Green Chili Chicken Pasta
- 2 cups cooked chicken
- 1 lb penne pasta, cooked
- 2 cups grated cheese (jack and/or jalapeno)
- 2 cups chicken broth
- 3 T butter
- 3 T flour
- 1 cup sour cream
- 4 oz diced green chilis
- dash cumin, green onions
Step by Step Instructions
Melt butter, add flour, when blended, add broth and stir till thickens.
Remove from heat and stir in undrained chopped chilis and sour cream, cumin.
Grease 9×13 pan and layer pasta, chicken, cheese – repeat. Pour sauce over and top with green onions.
Bake at 350 degrees 35 minutes. May be refrigerated to bake later.
Instant Pot for chicken – Cook 2-3 chicken breasts from frozen in 1 cup water or broth for 10 minutes with natural release for 10 minutes.
