Chicken Tetrazzini
Ingredients
- 4 cups cooked chicken
- 1 lb noodles
- 2 & 1/2 cups chicken stock
- 1 & 1/2 teaspoon salt
- 1/2 cup minced onion
- 1/3 cup minced bell pepper
- 1 clove minced garlic
- 1 lb sliced mushrooms
- 1/4 cup plain flour
- 3 cups milk
- 1 cup grated cheese
- dash thyme, dash tabasco
- 5 tablespoons butter
- 3 tablespoons olive oil
- bread crumbs
Instructions
PREHEAT OVEN TO 375
-Butter Pyrex Dish
-Cook 4 chicken breasts in salted water (or debone 2 rotisserie chickens)
-Saute onion, pepper, garlic & mushrooms in half the butter, half the oil, set aside
-Cook noodles in remaining chicken stock/do not drain
-Melt remaining butter, add remaining oil and stir in flour and milk, whisk cup of warm chicken stock, cook until thickened, stirring constantly, add seasonings
-Mix with half grated cheese and spread in dish, top with remaining cheese and breadcrumbs, sprinkle with paprika
-Bake 30 minutes.
