Chicken Piccata – Instant Pot


  • 2 t. xtra-virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth
  • 2 T fresh lemon juice
  • 8 chicken tenders
  • 3 T capers
  • 1 T butter
  • 2 T chopped fresh parsley


Saute garlic in olive oil in instant pot – about a minute.

Add wine and cook until reduced – about 5 minutes.

Turn off Instant Pot.

Add chicken broth and lemon, stir to scrape up all the bits, add chicken.

Close, lock and cook on high 30 minutes.

Use quick release, stir in capers and parley.

Serve over angel hair pasta.
