Energy Bars

Ingredients

  • Nonstick cooking spray
  • 2 large eggs
  • ¼cup maple syrup
  • ½ teaspoon salt, plus more for sprinkling
  • ¼ cup whole wheat flour
  • ½ teaspoon cinnamon
  • 1 ½ cups coarsely chopped walnuts, pecans, pistachios or a combination
  • 1 ½ cups coarsely chopped dates, dried apricots, dried cranberries or a combination

Instructions

STEP 1
Heat oven to 350 degrees. Using cooking spray, grease an 8-inch square metal baking pan. Line the bottom and sides with parchment paper.

STEP 2
In a large bowl, whisk the eggs, syrup and salt until smooth. Add the flour and cinnamon and whisk until smooth. Add the nuts and dried fruit and mix until evenly coated, then spread in an even layer in the pan.

STEP 3
Bake until set and golden brown, about 30 minutes. When you press the top, it should feel firm. Immediately sprinkle lightly with salt.

STEP 4
Cool completely in the pan on a rack. Cut into bars. The bars can be kept in an airtight container for up to a week at room temperature or up to a month in the freezer.
