Carrot-Banana Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 T. cinnamon
  • 2 t. baking soda
  • 1/4 t. salt
  • 1 c. vegetable oil
  • 1 c. sugar
  • 1 c. packed brown sugar
  • 4 large eggs
  • 1 & 1/2 c. grated carrots
  • 1 c. drained crushed pineapple
  • 1/2 c. mashed banana
  • 3/4 c. chopped pecans

FROSTING

8 oz pkg cream cheese

1 c. powdered sugar

3 T. unsalted butter

1/4 t. cinnamon

Beat until smooth and spread on cooled cake.

INSTRUCTIONS

Preheat oven to 350. Grease/flour bundt pan.

Sift first 4 ingredients. Whisk oil, sugars & eggs. Mix dry into wet ingredients.

Add carrots, pineapple, banana and pecans. Blend well. Bake 50-60 minuute. Let stand in pan 10 minutes.
