Pork Tenderloin

INGREDIENTS

  • 2 lbs pork tenderloins
  • 2/3 cup balsamic vinegar
  • 1/3 cup olive oil
  • 2 Tablespoons soy sauce
  • 4 teaspoons packed brown sugar
  • 3/4 teaspoon ground pepper
  • 1/2 cup chopped rosemary
  • 4 cloves garlic, minced
  • salt to taste
  • ( 2 sweet pototates, sliced 1/4”)

INSTRUCTIONS

1 – Whisk marinade ingredients and pour over tenderloins.

2 – Cover and refrigerate 2 hours or more.

3 – Preheat oven 425 m, then heat an oiled cast iron skillet.

4 – Sear meat on all sides, then roast in the oven 35 minutes at 400 (to internal temp of 145)
