Crock Pot Bottom Round Roast

 

Cut of meat makes the difference . . . or maybe it’s the wine!

 

Ingredients

  • 2.5 – 3 lb. boneless bottom round roast
  • 4 carrots
  • 8 small red potatoes
  • Salt and black pepper
  • 1 large onion
  • 1 Tablespoon Dijon mustard

  • 1 Tablespoon brown sugar

  • 1 Tablespoon Worcestershire

  • 1 cup dry red wine

  • 2 cups beef broth

Step by Step Instructions

STEP 1
Place chopped onion, potatoes and carrots in bottom of oiled crock pot.

STEP 2
Season all sides of roast liberally with salt and pepper
STEP 3
Place roast on top of vegetables, fat side down.
STEP 4
Combine mustard, sugar, Worcestershire, broth and wine in a separate bowl and pour over roast.
STEP 5
Cook for 6 hours on low. Roast is done when it shreds easily with a fork.
