Squash Casserole II

Ingredients

  • 3 lbs yellow squash, sliced
  • 1 stick butter, melted
  • 1 pkg Pepperidge Farm cornbread stuffing mix
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 large sweet onion sliced
  • 2 oz. pimento
  • 2 grated carrots
  • salt and pepper

Step by Step Instructions

STEP 1
Steam sliced squash, onion and carrots until just tender.

STEP 2
Mix melted butter with cornbread stuffing.
STEP 3
Mix steamed vegs, soup, sour cream, pimento, salt and pepper.
STEP 4
Layer squash and stuffing, ending with stuffing.
STEP 5
Bake for 40 minutes at 350 degrees.
