Chicken Tortilla Soup

Ally’s favorite with chips.

Ingredients

  • 3 skinless, boneless chicken breast, cut into cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cumin
  • 2 (14.5 ounce) chicken broth
  • 1 cup frozen corn
  • 1 can refried beans
  • 1 cup chopped onion
  • 1 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1 cup picante salsa

SERVE WITH

  • Corn Tortilla Chips
  • Monterey Jack Cheese or sour cream

Step by Step Instructions

STEP 1
In large pot, over medium heat, cook and stir chicken in the oil for 5 minutes.

STEP 2
Add garlic and cumin to chicken and mix well.
STEP 3
Add broth, corn, onion, chili powder, lemon juice and salsa.
STEP 4
Reduce heat to low and cook 30 minutes.
SERVE WITH
Chips, cheese, sour cream
