Starbucks Lemon Loaf

Ingredients

LOAF: 

  • 2 cups almond flour⁣
  • 1 teaspoon baking powder⁣
  • 1/2 teaspoon baking soda⁣
  • 1/2 teaspoon salt ⁣
  • Zest of 1 lemon
  • 4 eggs⁣
  • 2/3 cup maple syrup ⁣
  • 1/4 cup avocado oil ⁣

GLAZE: 

  • 2/3 cup powdered sugar 
  • Lemon juice from zested lemons

Step by Step Instructions

STEP 1

Preheat the oven to 350 and line a 9X5 loaf pan with parchment paper. Set aside.

STEP 2

In a large bowl, add the almond flour, baking powder, baking soda, salt, lemon zest, eggs, maple syrup, and oil and whisk together until a smooth batter is formed.

STEP 3

Pour the batter into the parchment-lined loaf pan and bake for 45 minutes to 1 hour, until a toothpick inserted in the center comes out clean. Start checking at the 45 minute mark. 

STEP 4

Add the powdered sugar to a small bowl. Whisk in lemon juice one teaspoon at a time until you get a thick icing. Once glaze consistency, add in remaining 1/2 lemon’s worth of zest.

STEP 5

Once bread is completely cooled, pour the glaze over the lemon loaf. Cut it into slices. Store left overs in refrigerator.
