Spagetti Sauce

A vegetarian sauce without the meatballs. We add frozen italian meatballs. I add a small eggplant that you don’t know is there.

 

Ingredients

  • 2 Tablespoons cup olive oil
  • 3 cloves garlic, minced
  • 1 sweet onion, chopped
  • 1 small green pepper, chopped
  • 1 stalk celery, minced
  • 1 (29 0z) can crushed tomatoes
  • 1 (14 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 small can spicy V-8
  • (1 small eggplant, chopped)
  • 1/2 cup fresh basil
  • 2 teaspoons dried oregano
  • 1 teaspoon thyme
  • 1/4 teaspoon cayenne
  • 1 bay leaf
  • salt and pepper

Step by Step Instructions

STEP 1
Saute garlic, onion, green pepper and celery in olive oil until soft.

STEP 2
Add remaining ingredients, cover and simmer 1-2 hours, stirring occasionally to prevent sticking.
STEP 3
Add frozen italian meatballs during last hour.
