Mediterranean Salad

INGREDIENTS NEEDED

  • 1 can Cannellini beans
  • 1 cup Garbanzo beans
  • 1 cup cherry tomatoes, halved
  • 2 small cucumbers, sliced
  • 2 green onions
  • 1/2 cup black olives
  • 1 cup bell peppers, diced
  • 1 can small artichokes, quartered
  • 1/2 cut feta cheese
  • 10 fresh basil leaves, chopped

DRESSING

  • 1/4 cup olive oil
  • 3 Tablespoons red wine vinegar
  • 1 Tablespoon fresh lemon juice
  • 1/4 teaspoon Dijon mustard
  • 1 garlic clove, crushed or minced
  • 1 teaspoon Italian herbs
  • 1 teaspoon Nature’s seasons OR salt and pepper
  • OPTIONAL – serve over fresh spinach or romaine, top with chicken or shrimp

Step by Step Instructions

STEP 1
Mix dresssing and set aside.

STEP 2
Drain, chop, mix all ingredients.
STEP 3
Toss with dressing and chill.
