Mediterranean Salad
INGREDIENTS NEEDED
- 1 can Cannellini beans
- 1 cup Garbanzo beans
- 1 cup cherry tomatoes, halved
- 2 small cucumbers, sliced
- 2 green onions
- 1/2 cup black olives
- 1 cup bell peppers, diced
- 1 can small artichokes, quartered
- 1/2 cut feta cheese
- 10 fresh basil leaves, chopped
DRESSING
- 1/4 cup olive oil
- 3 Tablespoons red wine vinegar
- 1 Tablespoon fresh lemon juice
- 1/4 teaspoon Dijon mustard
- 1 garlic clove, crushed or minced
- 1 teaspoon Italian herbs
- 1 teaspoon Nature’s seasons OR salt and pepper
- OPTIONAL – serve over fresh spinach or romaine, top with chicken or shrimp
