Chickpea Salad

Ingredients

  • 3 cans chickpeas or pkg. Rancho Gordo (cooked and cooled)
  • 1 cup thinly sliced celery
  • 1/2 cup thinly sliced green onion
  • 2 T. fresh parsley, minced
  • 1 T. fresh dill, minced
  • 1/2 cup plain Greek yogurt
  • 2 Tablespoons mayo
  • 2 Tablespoons lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Step by Step Instructions

STEP 1
In small bowl, combine yogurt, mayo, lemon juice, mustard, salt and pepper. Whisk until smooth, stir in dill and parsley.

STEP 2
Combine chickpeas, celery and onion. Add dressing and toss well.
STEP 3
Best served at room temperature.
