Pasta Salad

 INGREDIENTS NEEDED

  • 1 cup tri-color pasta (and/or cheese tortellini)
  • 1 can chickpeas, drained
  • 1/4 cup sliced black olives
  • 1/2 cup sliced celery
  • 1/2 cup chopped fresh parsley and basil
  • 1/3 cup grated Parmesan

 

DRESSING

  • 1/3 cup olive oil
  • lemon juice – 1 lemon
  • 1 teaspoon salt
  • pepper
  • 1 clove garlic, minced

 

INSTRUCTIONS

1 – Mix drained chickpeas with dressing.

2 – Cook and drain pasta & toss with chickpeas

3 – Combine all ingredients, toss and chill.
