Pasta Salad
INGREDIENTS NEEDED
- 1 cup tri-color pasta (and/or cheese tortellini)
- 1 can chickpeas, drained
- 1/4 cup sliced black olives
- 1/2 cup sliced celery
- 1/2 cup chopped fresh parsley and basil
- 1/3 cup grated Parmesan
DRESSING
- 1/3 cup olive oil
- lemon juice – 1 lemon
- 1 teaspoon salt
- pepper
- 1 clove garlic, minced
INSTRUCTIONS
1 – Mix drained chickpeas with dressing.
2 – Cook and drain pasta & toss with chickpeas
3 – Combine all ingredients, toss and chill.
