Coconut Rice


  • 1 T. olive oil
  • 1 t. ginger or 1 T. fresh grated
  • 2 cloves garlic, minced
  • 1 cup jasmine rice, rinsed and drained
  • 3/4 cup coconut milk
  • 3/4 cup water
  • 1/2 t. sugar
  • 1 t. lime zest
Heat oil, add ginger and garlic, cook, stirring, about a minute, then add rice and stir, cook about a minute.

Pour in coconut milk and water. Add sugar, zest and salt, bring to boil, reduce to low and cook about 15 minutes until rice is tender. Let stand 5 minutes.
