Instant Pot Broccoli Cheddar Soup

Ingredients

  • 2 Tablespoons butter
  • 1 cup diced onion
  • 2 cloves garlic
  • 4 cups vegetable or chicken broth
  • 4 cups chopped broccoli florets
  • 1 cup grated carrots
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon red pepper
  • 2 cups milk (or half and half)
  • 2 cups grated cheddar
  • For thicker soup, 1/4 cornstarch and 1/4 cup water

Step by Step Instructions

STEP 1
Put Instant Pot on ‘Saute’ and melt butter, add onion and saute 2 minutes.

STEP 2
Add garlic, stir in stock, broccoli, carrots, salt, pepper and red pepper.
STEP 3
Lock lid, make sure VENT is set to seal, and select high pressure for 1 minute cook time. Allow to naturally release pressure for a couple of minutes, then use quick pressure release.

STEP 4
Slowing add milk and stir in cheese until melted. NOTE: For thicker soup, add cornstarch/water mixture.
