French Onion Soup

Ingredients

  • 3 T. unsalted butter
  • 4 large sweet onion, thinly sliced
  • 1 t. salt
  • dash thyme
  • 8 cups beef stock
  • 1/2 cup red or white wine
  • 1 T. dry sherry
  • 1 T. flour
  • 1/2 t. black pepper
  • French Bread
  • 1 & 1/2 cups grated cheese (Gruyere)

Step by Step Instructions

STEP 1

Cook onions in butter and 1/2 t. salt until soft, then simmer (caramelize) 45 minutes.

STEP 2

Mix broth, wine & sherry, bring to boil, stir in flour, then add onions and mix well.

STEP 3

Divide into onion-proof bowls, top with bread and cheese, bake 1-2 minutes until cheese is melted.
