Banana Carrot Bread

INGREDIENTS

  • 2 very ripe bananas
  • 1/2 cup shredded carrots
  • 1/4 cup olive oil
  • 2 teaspoons vanilla
  • 1/3 cup maple syrup
  • 1/2 cup yogurt
  • 2 eggs
  • 1/2 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnut pieces

INSTRUCTIONS

1 – Heat oven to 350 degrees. Grease bundt pan.

2 – Mix all dry ingredients in list 1. Blend all wet ingredients. Mix until just combined.

3 – Pour into greased pan and bake 30 – 35 minutes until tootpick comes out clean.

4 – Cool in pan 15 minutes, then invert onto a rack/plate.
