Asparagus Vinaigrette

INGREDIENTS

  • 2 lbs asparagus
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1 & 1/2 teaspoon Dijon mustard
  • Juice of 1/2 lemon
  • 1/2 cup Olive Oil
  • 2 Tablespoons Red Wine Vinegar

INSTRUCTIONS

1 – Steam asparagus until just tinder, rinse with cold water.

2 – Mash minced garlic and salt together with the back of a spoon.

3 – Whisk dressing ingredients together until smooth and pour over asparagus.
